Roasted Chicken with Squash

Ingredients
- 1 whole chicken cut into 8 pieces
- ½ kg squash peeled and chopped
- ½ kg carrots cut into thin sticks
- ½ kg onion grated
- Chicken broth as needed
- Salt to taste
- Black pepper to taste
- Cumin to taste
- ¼ teaspoon red chili pepper
- Cinnamon to taste
- Bay leaf dried/powdered, to taste
- 2 yellow bell peppers
- 2 onions sliced
- ¼ cup balsamic vinegar
Instructions
- Clean the chicken thoroughly and pat it dry. Marinate it with a mix of the spices, balsamic vinegar, and grated onion. Rub it in well and set it aside for 15 minutes.
- Place the sliced onions, carrots, squash, and yellow bell peppers in an oven dish (Tajin). Season them with a little of the spice mix and a drizzle of olive oil.
- Place the chicken pieces on top of the vegetables. Add a little more olive oil and half a cup of broth.
- Put the dish in the oven for 35 minutes, or until the chicken is cooked through and the vegetables are tender.
- Serve the dish hot.
