Quinoa with Roasted Vegetables
This meal is an excellent and healthy choice for anyone following a weight loss diet.
Ingredients
- 1 cup quinoa cooked
- 1 zucchini cut into medium cubes
- 1 eggplant cut into medium cubes
- 2 colored bell peppers cut into medium cubes
- 1 tomato cut into medium cubes
- 1 onion cut into medium cubes
- 1 carrot cut into medium cubes
- 1 cup pumpkin cut into medium cubes
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander powder
- A pinch of salt
- A pinch of black pepper
- Fresh basil as desired (for garnish)
- 1 tablespoon lemon juice
Instructions
- Wash the vegetables and cut them into medium-sized pieces.
- Place the vegetables on a baking tray, drizzle with olive oil, and season with salt, black pepper, cumin, and coriander powder. Roast them in the oven until they are tender and cooked through.
- Place the cooked quinoa on a serving plate.
- Add the roasted vegetables on top.
- Drizzle the dish with a little lemon juice and garnish with fresh basil. Serve immediately.
