Protein Salad
Protein salad is known for its balance of proteins, fiber, and essential nutrients that the body needs while following a weight loss diet.
Ingredients
- 1 cup chickpeas soaked and boiled
- 3 tablespoons corn boiled
- 1/2 red bell pepper finely chopped
- 1/2 green bell pepper finely chopped
- 2 spring onions thinly sliced
- 1 bunch parsley finely chopped
- Juice of 1 lemon
- 1 tablespoon white vinegar or apple cider vinegar
- 1 teaspoon ground cumin
- 1 tablespoon extra virgin olive oil
Instructions
- In a deep bowl, combine the boiled chickpeas, corn, red bell pepper, green bell pepper, spring onions, and chopped parsley.
- Add the lemon juice, vinegar, cumin, and olive oil to the bowl. Toss everything together until the flavors are well combined.
- Refrigerate the protein salad for 30 minutes. Then transfer it to a serving plate and serve cold.
