Pomegranate Vegetable Salad
This salad is rich in fiber, vitamins, and minerals, and low in calories.
Ingredients
- Pomegranate: 1 cup fresh seeds
- Lettuce: ½ cup chopped
- Arugula: ½ cup leaves
- Cucumber: ½ cup diced small
- Tomato: ½ cup diced small
- Bell Pepper: ½ cup diced small
- Red Onion: ¼ cup thinly sliced
- Fresh Cilantro: ½ cup chopped
- Lemon Juice: 2 tablespoons fresh
- Olive Oil: 1 tablespoon extra virgin
- Pomegranate Molasses: 1 teaspoon
- Salt: a pinch
- Black Pepper: a pinch
- Dried Mint: a pinch
- Mint Leaves: for garnish fresh
Instructions
- In a large, deep glass bowl, combine the lettuce (or arugula), cucumber, tomato, bell pepper, red onion, and cilantro. Toss the ingredients gently to mix.
- In a small bowl, whisk together the lemon juice, olive oil, pomegranate molasses, salt, black pepper, and dried mint until the dressing is well combined.
- Add the fresh pomegranate seeds to the bowl of vegetables, then pour the dressing over the salad.
- Gently toss the salad again until all the ingredients are coated with the dressing.
- Garnish the salad with some fresh mint leaves or an extra sprinkle of pomegranate seeds.
- Serve the pomegranate vegetable salad immediately while fresh.
