Ingredients
- Tomatoes: 2 diced
- Eggplant: 1 diced
- Zucchini: 2 diced
- Red Bell Pepper: 1 cut into squares
- Onion: 1 sliced
- Salt: 1 teaspoon
- Oregano: 1 teaspoon
- Olive Oil: 3 tablespoons
- Black Pepper: 1/2 teaspoon
- Hot Water: 1/4 cup
Instructions
- In a baking dish, mix the onion, eggplant, tomatoes, bell pepper, and zucchini.
- Add the olive oil, salt, black pepper, and oregano. Toss to coat.
- Add the hot water, cover the dish with aluminum foil, and bake in a preheated oven at 200°C (400°F) for 25 minutes.
- Remove the foil and roast for another 10 minutes to brown. Serve hot alongside grilled meat or chicken.
