Oatmeal & Veggie Pancakes
Pancakes are a popular Western dish that can be served as a sweet dessert or a light breakfast.
Ingredients
- 1 cup oats
- 1/2 cup flour
- 1/2 cup feta cheese
- 1/4 cup cheddar cheese
- 1 teaspoon baking powder
- A pinch of salt
- A pinch of thyme
- 2 eggs
- 1/2 cup milk
- 2 tablespoons olive oil
- 1 onion chopped
- 1/2 tomato chopped
- 1/2 colored bell pepper chopped
- 1 carrot grated
- 2 green onions chopped
Instructions
- In a bowl, mix the oats, flour, baking powder, salt, and thyme until combined.
- In another deep bowl, whisk the eggs, milk, and olive oil well using an electric mixer.
- Add the oat and flour mixture to the egg and milk mixture. Then, add the onion, tomato, carrot, bell pepper, and green onions. Mix all the ingredients together.
- Add the feta and cheddar cheese, and mix again until you get a semi-liquid batter.
- Lightly grease a non-stick pan with olive oil and place it over medium heat.
- Pour about a quarter cup of the pancake batter into the pan. Cook for about 2 minutes on each side until golden brown and cooked through. Repeat the process until all the batter is used.
- Place the oatmeal and veggie pancakes on a serving plate and serve hot.
