Oatmeal & Veggie Pancakes

Ingredients
  

  • 1 cup oats
  • 1/2 cup flour
  • 1/2 cup feta cheese
  • 1/4 cup cheddar cheese
  • 1 teaspoon baking powder
  • A pinch of salt
  • A pinch of thyme
  • 2 eggs
  • 1/2 cup milk
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 1/2 tomato chopped
  • 1/2 colored bell pepper chopped
  • 1 carrot grated
  • 2 green onions chopped

Instructions
 

  • In a bowl, mix the oats, flour, baking powder, salt, and thyme until combined.
  • In another deep bowl, whisk the eggs, milk, and olive oil well using an electric mixer.
  • Add the oat and flour mixture to the egg and milk mixture. Then, add the onion, tomato, carrot, bell pepper, and green onions. Mix all the ingredients together.
  • Add the feta and cheddar cheese, and mix again until you get a semi-liquid batter.
  • Lightly grease a non-stick pan with olive oil and place it over medium heat.
  • Pour about a quarter cup of the pancake batter into the pan. Cook for about 2 minutes on each side until golden brown and cooked through. Repeat the process until all the batter is used.
  • Place the oatmeal and veggie pancakes on a serving plate and serve hot.
