Marinade for Grilled Diet Chicken Breast

Ingredients
- 1 kg Chicken Breast cut into medium pieces
- 4 tablespoons Olive Oil
- 5 cloves Garlic minced
- 1 teaspoon Dried Mint
- 1/2 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 Lemons juiced
- 1 Eggplant cut into medium pieces
- 1 Onion cut into pieces
- 2 Bell Peppers assorted colors, cut into medium pieces
- 2 Lemons cut into pieces
Instructions
- In a large bowl, mix the chicken with 2 tablespoons of olive oil, garlic, dried herbs, salt, and pepper. Let it marinate for 30 minutes.
- Whisk the remaining olive oil with the lemon juice. Preheat the grill to the highest setting.
- Thread the chicken, eggplant, onion, and bell peppers onto 8 wooden skewers, placing a piece of lemon at the end of each. For an enhanced taste, season with salt and pepper, then brush them with the oil and lemon mixture.
- Grill for about 9 minutes, or until the chicken is fully cooked.
