Light Vegetable Rice
Light Vegetable Rice for Diet a healthy, tasty, and colorful dish packed with vitamins, fiber, & essential nutrients. Customize veggies to your taste!
Ingredients
- 3 cups brown rice cooked
- 1 cup peas cooked
- 1 cup fresh mushrooms sliced
- 1 cup chickpeas cooked and peeled
- 1 cup carrots peeled and diced
- 1 cup green beans cut
- 1 teaspoon garlic minced
- 1 onion chopped
- 1 vegetable bouillon cube
- 2 tablespoons olive oil
- A pinch of salt
- A pinch of black pepper ground
- 1 tablespoon parsley chopped
- ¼ cup water
Instructions
- Heat the olive oil in a pot over medium heat. Add the onion and sauté until it softens.
- Add the garlic, carrots, and green beans. Stir the ingredients for a few minutes.
- Add the peas, chickpeas, mushrooms, and chopped parsley. Mix well and season the vegetables with salt, black pepper, and the vegetable bouillon cube.
- Add the cooked brown rice and water, and stir well.
- Transfer the brown rice with vegetables to a serving dish and serve hot.
