Today, we present a Keto Taco Salad a delicious, refreshing meal perfect for the keto diet. It combines the traditional Mexican taco flavors with healthy, low-carb ingredients. Here’s how to make it.

Ingredients
- For the Dressing:
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- A pinch of salt
- A pinch of black pepper
- For the Salad:
- 2 tortilla breads made from corn flour
- 250 g ground beef
- 1 small onion chopped
- 2 cloves garlic minced
- 2 tablespoons taco seasoning
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
- 1 head of lettuce chopped
- 1 avocado diced
- 1 cup cherry tomatoes halved
- ½ cup cheddar cheese shredded
- ¼ cup red onion chopped
- 1 bell pepper finely diced
Instructions
- Heat the olive oil in a pan over medium heat. Add the onion and garlic and sauté until softened.
- Add the ground beef and cook until it browns. Season with taco seasoning, salt, and black pepper, and mix well.
- Let the meat cook over low heat until fully done.
- Toast the tortilla breads in the oven in a deep bowl so they form a bowl shape.
- In the toasted tortilla bowls, place the chopped lettuce, bell pepper, avocado, cherry tomatoes, cheese, red onion, and cilantro. Add the cooked ground beef on top.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Drizzle the dressing over the salad and toss gently.
- Serve the Keto Taco Salad immediately.
