Ingredients
  

  • 500 grams chicken breast boiled and cubed
  • 4 tablespoons olive oil
  • 1/2 bunch celeriac large, cut into cubes
  • 1 cup celery chopped
  • 6 cups unsalted chicken broth
  • 1/4 cup carrot cubed
  • 1/2 cup onion cubed
  • 1 clove garlic sliced
  • 1 teaspoon lemon zest
  • 1 bay leaf
  • 1 tablespoon garlic herb seasoning mix
  • 1 teaspoon chicken bouillon powder
  • 1 teaspoon lemon juice mixed with water
  • A pinch of salt
  • A pinch of black pepper

Instructions
 

  • Heat the olive oil in a pot over medium heat. Add all the vegetables, lemon zest, and bay leaf. Sauté the ingredients for a few minutes.
  • Add the garlic herb seasoning, chicken broth, and the lemon-water mixture. Stir the mix, then cover the pot and let it cook for about 4 minutes.
  • Reduce the heat and let the pot simmer until the vegetables are fully cooked. You can check if they're done by piercing them with a fork.
  • Add the cubed chicken and season the soup with salt and black pepper.
  • Ladle the lemon chicken soup into serving bowls and serve it hot.
