Zucchini with Olive Oil
Zucchini is an ideal vegetable for anyone following a healthy diet.
Ingredients
- 4 medium zucchinis washed and cut
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic minced
- Salt to taste
- Black pepper to taste
- 1 teaspoon oregano
- Juice of half a lemon optional
- A pinch of red pepper flakes
Instructions
- Wash the zucchinis well and cut them into slices or sticks of the same size.
- In a pan over medium heat, add the olive oil and the minced garlic. Sauté for about one minute until the garlic is fragrant.
- Add the zucchini slices to the pan and toss them well with the garlic and olive oil.
- Add the salt, black pepper, and oregano. Continue to stir the zucchini occasionally until they become tender and slightly golden, for about 5-7 minutes.
- Once the zucchini is cooked, remove the pan from the heat.
- Add the lemon juice and a pinch of red pepper flakes for a fresh and spicy flavor. Serve the zucchini hot.
