Grilled Cilantro Lime Chicken

Grilled chicken is one of the best easy and quick recipes for a diet. Present chicken breasts with the refreshing, tangy taste of lime and delicious cilantro.

Ingredients
  

  • Chicken Breast: 8 breasts boneless, skinless
  • Fresh Cilantro: 1 bunch
  • Lime Zest: from 1 lime
  • Lime Juice: from 2 limes
  • Garlic: 3 cloves minced
  • Ground Coriander: 1 teaspoon
  • Salt: 1 teaspoon
  • Black Pepper: 1 teaspoon
  • Olive Oil: 2 tablespoons

Instructions
 

  • In a blender, combine the fresh cilantro, lime zest, lime juice, minced garlic, salt, black pepper, ground coriander, and olive oil.
  • Blend the ingredients until they are completely mixed and smooth.
  • Place the chicken in a large, sealable bag and add the marinade to it.
  • Press the air out of the bag and seal it tightly. Gently press the marinade around the chicken pieces to coat them completely. Refrigerate for a full night (or at least a few hours) so the chicken absorbs the marinade.
  • Lightly oil the grill and preheat it to medium heat.
  • Place the chicken breasts on the grill. Grill for about 5 minutes on each side, or until fully cooked.
  • Transfer to a serving platter and serve hot.
