Ginger Cauliflower Rice
Prepare a simple lunch recipe with few ingredients that is quick and easy to make.
Ingredients
- 250 g Cauliflower florets
- 2 tablespoons Olive Oil
- 1/4 cup Fresh Coriander
- A pinch of Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Ginger ground
- Zest of 1 Lemon
Instructions
- Wash the cauliflower florets well and cut them into medium-sized pieces. Then, place them in a food processor and pulse until they are broken down into very small pieces, like grains of rice.
- Dry the grated cauliflower by spreading it on parchment paper and pressing it with a dry cloth.
- Heat a wide, non-stick pan over the fire. Add the olive oil, then the grated cauliflower. Stir a little, then season with salt, ginger, black pepper, and lemon zest. Cook until the cauliflower begins to soften slightly.
- Turn off the heat, add the coriander, and stir it into the "rice."
- Pour the cauliflower rice directly into a serving dish and serve hot.
