Garlic and Herb Roasted Vegetables
This delicious dish of garlic and herb roasted vegetables is both simple and wonderfully flavorful.
Ingredients
- 1 cup broccoli cut into small florets
- 1 potato diced into cubes
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 1/2 cup peas frozen
- 1 eggplant cut into cubes or slices
- 1 carrot cut into large cubes
- 1 onion sliced
- 1 teaspoon garlic minced
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried herbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat one tablespoon of olive oil in a pan on the stove. Sauté the garlic and onion until they caramelize, for about 5 minutes.
- Place the garlic and onion in an oven dish.
- Add the potatoes, carrots, peas, broccoli, and eggplant to the dish. Then add the red and yellow bell peppers.
- Drizzle the remaining oil, herbs, salt, and black pepper over the vegetables. Place the dish in an oven preheated to 200°C (400°F) for 30 minutes, stirring occasionally.
- You can add a little water if needed.
- Remove the dish from the oven, drizzle with lemon juice, transfer the vegetables to a serving plate, and serve hot.
