It can be prepared in a delicious way with grilled chicken for a satisfying & light meal.

Fattoush with Grilled Chicken
Levantine Fattoush salad is one of the healthy types of salads that can be eaten while following a diet.
Ingredients
- For the Dressing:
- ½ teaspoon salt
- 2 tablespoons pomegranate molasses
- 1 lemon juiced
- 1 tablespoon olive oil
- 1 tablespoon sumac
- For the Salad:
- 2 tomatoes chopped
- 1 spring onion stalk chopped
- ¼ cup parsley chopped
- ¼ cup mint chopped
- 2 eggplants cut into cubes and oven-roasted
- 2 chicken breasts grilled and sliced
- 1 cup pita bread toasted in the oven
Instructions
- In a bowl, mix all the salad ingredients together, except for the bread and chicken.
- Mix the dressing ingredients and toss them with the vegetables until well combined.
- Place the toasted bread on top of the salad, add the grilled chicken, and serve immediately.
