Tuna Pasta Salad
This is a simple and healthy tuna pasta salad, perfect for a diet.
Ingredients
- For the Dressing:
- Lemon juice: 3 tablespoons
- Olive oil: ¼ cup
- Yogurt: 2 tablespoons
- Mustard: ½ teaspoon
- Garlic powder: ¼ teaspoon
- Salt: ½ teaspoon
- Black pepper: ¼ teaspoon
- Parsley: 1 ¼ tablespoons chopped
- For the Salad:
- 1 packet of penne pasta
- 2 cans of tuna
- Onion: ½ cup chopped
- Cherry tomatoes: 1 cup cut in half
- Olives: ½ cup pitted
- Cucumber: 1 cup diced
- Capers: 3 tablespoons drained
Instructions
- Cook the pasta in a pot of salted boiling water for 10-12 minutes (or as directed on the package). Drain the pasta, rinse it with water, and set it aside to cool down.
- To make the dressing: In a medium bowl, mix the lemon juice, olive oil, yogurt, mustard, garlic powder, salt, black pepper, and chopped parsley.
- In a large serving bowl, combine the cooled pasta, tuna, cucumber, onion, tomatoes, olives, and capers. Pour the dressing over the top and gently toss everything together until it's mixed well.
- Serve your diet tuna pasta salad immediately. Enjoy
