Kleija Cardamom Biscuits

Kleija is one of the most famous types of sweets in Saudi cuisine, often served during holidays and family feasts.

Ingredients
  

  • 2 cups white flour
  • 1 cup wheat flour Burr
  • 1 cup oil
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ginger ground
  • 1 teaspoon cardamom ground
  • 1 teaspoon cinnamon
  • 1/2 teaspoon turmeric
  • Sesame seeds for garnish, as desired

Instructions
 

  • In a deep bowl, place the white flour and wheat flour. Then add the sugar, cardamom, ginger, and cinnamon to them.
  • Add the oil and knead the ingredients by hand.
  • Add warm water and knead until a slightly firm and cohesive dough forms.
  • Shape the dough into small circles and form them using a Kleija mold, a Maamoul mold, or using your preferred method.
  • Place the Kleija on a baking tray lined with parchment paper and let them rest for 25 minutes.
  • Put them in a preheated oven at 180°C (350°F) for 15 minutes on the bottom rack, then brown them for 3 minutes on the top rack.
  • Let them cool completely, then serve.
