Kleija Cardamom Biscuits
Kleija is one of the most famous types of sweets in Saudi cuisine, often served during holidays and family feasts.
Ingredients
- 2 cups white flour
- 1 cup wheat flour Burr
- 1 cup oil
- 3/4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon ginger ground
- 1 teaspoon cardamom ground
- 1 teaspoon cinnamon
- 1/2 teaspoon turmeric
- Sesame seeds for garnish, as desired
Instructions
- In a deep bowl, place the white flour and wheat flour. Then add the sugar, cardamom, ginger, and cinnamon to them.
- Add the oil and knead the ingredients by hand.
- Add warm water and knead until a slightly firm and cohesive dough forms.
- Shape the dough into small circles and form them using a Kleija mold, a Maamoul mold, or using your preferred method.
- Place the Kleija on a baking tray lined with parchment paper and let them rest for 25 minutes.
- Put them in a preheated oven at 180°C (350°F) for 15 minutes on the bottom rack, then brown them for 3 minutes on the top rack.
- Let them cool completely, then serve.
