Cauliflower soup is a healthy, hot appetizer perfect for any table, especially for those following a diet.
Ingredients
- 200 grams cauliflower cut into small pieces
- 1 onion chopped
- 1 clove garlic minced
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 1/2 cup skim milk
- Salt to taste
- Black pepper to taste
- Cumin to taste, optional
Instructions
- In a pot, heat a little oil, then add the onion and garlic. Sauté until they soften.
- Add the cauliflower pieces and stir for two minutes.
- Pour in the vegetable broth, and add salt, pepper, and cumin.
- Cover the pot and let it cook over medium heat until the cauliflower is completely tender.
- Using an immersion blender, puree the mixture until smooth and creamy.
- Add the milk and stir well.
- Serve the soup hot.
