Cauliflower soup is a healthy, hot appetizer perfect for any table, especially for those following a diet.

Ingredients
  

  • 200 grams cauliflower cut into small pieces
  • 1 onion chopped
  • 1 clove garlic minced
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1/2 cup skim milk
  • Salt to taste
  • Black pepper to taste
  • Cumin to taste, optional

Instructions
 

  • In a pot, heat a little oil, then add the onion and garlic. Sauté until they soften.
  • Add the cauliflower pieces and stir for two minutes.
  • Pour in the vegetable broth, and add salt, pepper, and cumin.
  • Cover the pot and let it cook over medium heat until the cauliflower is completely tender.
  • Using an immersion blender, puree the mixture until smooth and creamy.
  • Add the milk and stir well.
  • Serve the soup hot.
