Coconut Donuts
Try this donut dessert and serve it as a light and tasty sweet treat for your kids too.
Ingredients
- For the Coating:
- 50 grams coconut toasted and unsweetened
- 2 tablespoons sugar substitute
- For the Donuts:
- 220 grams flour coconut flour
- 2 tablespoons sugar substitute
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 4 eggs
- 50 milliliters coconut oil
- 100 milliliters almond milk unsweetened
- ½ tablespoon vanilla extract
- Oil as needed (for frying)
Instructions
- Preheat the oven to 180°C (350°F).
- Lightly grease a donut pan with a little oil.
- In a bowl, mix the coconut flour, sugar substitute, baking powder, and salt.
- Add the eggs, coconut oil, almond milk, and vanilla extract. Mix the ingredients until you get a smooth batter.
- Fill the cavities in the donut pan two-thirds full with the batter.
- Bake the pan in the oven for 15 minutes until the edges are lightly browned. Then, let them cool completely.
- Heat oil in a wide pan over medium heat. Add the donuts in a single batch and fry them for about one minute on each side.
- In a separate bowl, mix the toasted coconut with the sugar substitute until combined.
- Remove the donuts from the pan, then roll them in the toasted coconut mixture. Let them cool, then place them on a serving plate and serve.
