- Dry Ingredients:
- 1 cup flour oat flour
- 1/2 cup cocoa powder raw, unsweetened
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- A pinch of salt
- Wet Ingredients:
- 1 large egg
- 1/2 cup yogurt low-fat
- 1/4 cup milk low-fat
- 1/2 cup honey
- 1/4 cup coconut oil melted
- 1 teaspoon vanilla extract
- For Garnish:
- Berries and fresh strawberries
Instructions
- In a large bowl, mix the flour, cocoa powder, baking soda, baking powder, and salt. Stir the ingredients well until combined.
- In another bowl, whisk the egg. Then add the yogurt, milk, honey, coconut oil, and vanilla. Mix well until smooth.
- Gradually add the wet ingredients to the dry ingredients. Stir with a spoon or a hand whisk until just combined. Do not overmix.
- Pour the batter into a cupcake pan lined with paper cups, filling each cup only two-thirds full.
- Bake the cupcakes in a preheated oven at 180°C (350°F) for 15-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Remove the cupcakes from the oven and let them cool completely before serving.
