Ingredients
  

  • 2 chicken breasts grilled or boiled and sliced
  • 1 ripe avocado sliced or cubed
  • ½ cucumber sliced
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • Juice of half a lemon
  • 1 teaspoon olive oil
  • A pinch of salt
  • A pinch of black pepper

Instructions
 

  • In a deep bowl, gently mix the avocado cubes with the lemon juice, olive oil, salt, and black pepper.
  • Add the cucumber, tomatoes, and red onion. Toss the ingredients gently until they are well combined.
