Chicken breast with avocado is a perfect choice for a light and delicious lunch or dinner for anyone following a healthy and balanced diet.
Ingredients
- 2 chicken breasts grilled or boiled and sliced
- 1 ripe avocado sliced or cubed
- ½ cucumber sliced
- ½ cup cherry tomatoes halved
- ¼ cup red onion finely chopped
- Juice of half a lemon
- 1 teaspoon olive oil
- A pinch of salt
- A pinch of black pepper
Instructions
- In a deep bowl, gently mix the avocado cubes with the lemon juice, olive oil, salt, and black pepper.
- Add the cucumber, tomatoes, and red onion. Toss the ingredients gently until they are well combined.
