Broccoli Detox Soup is a healthy dish rich in minerals, vitamins, and fiber.
Ingredients
- Broccoli: 1 cup chopped
- Spinach: 1 cup chopped
- Zucchini: 2 cut into cubes
- Carrots: 2 sliced
- Potato: 1 medium cut into cubes
- Onion: 1 medium chopped
- Garlic: 2 cloves crushed
- Ginger: 1 teaspoon grated
- Turmeric: 1 teaspoon
- Cumin: 1 teaspoon
- Salt: a pinch
- Black Pepper: a pinch
- Water: 8 cups
- Olive Oil: 1 tablespoon
Instructions
- Heat the olive oil in a deep pot over medium heat. Add the onion and garlic and sauté until they soften.
- Add the zucchini, carrots, and potato. Then add the broccoli and spinach, and stir the ingredients for about 5 minutes.
- Season with ginger, turmeric, and cumin.
- Pour the water into the pot and let the mixture come to a boil.
- Reduce the heat and let the soup simmer gently for about 25 minutes.
- Carefully transfer the soup to an electric blender and blend until smooth.
- Return the soup to the pot, season with salt and black pepper, and stir. Let the soup cook on the heat for about 8 more minutes.
- Ladle the Broccoli Detox Soup into serving bowls and serve hot.
