Broccoli & Celery Soup

Ingredients
- Butter: 1 tablespoon light
- Olive Oil: 1 tablespoon
- Celery: 1 stalk chopped
- Garlic: 2 cloves minced
- Green Thyme: 1 teaspoon or parsley / fresh and chopped
- Broccoli: 8 cups chopped
- Water: 2 cups
- Chicken Broth: 4 cups light and low-fat
- Salt: 1/2 teaspoon
- Black Pepper: to taste
Instructions
- In a pot over medium heat, heat the oil and butter. Add the onion and celery and cook, stirring, until they soften.
- Add the garlic and thyme (or parsley) and stir for about 10 seconds.
- Add the broccoli, followed by the water, broth, salt, and pepper. Let the soup simmer over low heat for about 10 minutes until the broccoli becomes very tender.
- Blend the soup until smooth using a blender.
- Serve the soup hot.
