Try this easy and simple recipe for a diet salad with avocado and shrimp.
Ingredients
- For the Dressing:
- 1/4 cup lemon juice
- 1/2 cup olive oil
- 2 cloves garlic minced
- 1 teaspoon salt
- A pinch of black pepper
- For the Salad:
- 1 kg large shrimp
- 2 avocados peeled and sliced
- 2 tomatoes chopped into small pieces
- Lettuce as desired
- 1 onion finely chopped
- A bunch of cilantro finely chopped
Instructions
- Boil the shrimp in a pot of water until fully cooked.
- Remove the heads, peel the shrimp, and set them aside.
- Chop the lettuce and spread it evenly on a large serving plate. Add the tomatoes, onion, and avocado slices on top.
- To make the dressing: In a small bowl, mix the lemon juice, olive oil, garlic, salt, and black pepper well.
- Pour the dressing over the ingredients on the plate.
- Add the boiled shrimp, sprinkle the chopped cilantro on top, and then serve.
