Mutabbaq is one of the most famous types of baked goods in Saudi cuisine. It’s a type of thin, homemade pastry prepared with simple steps & served with various fillings. Today, we present a recipe for Mutabbaq with a filling of eggs & leeks as the main vegetable component, suitable for a diet.

Vegetable Mutabbaq
Mutabbaq is one of the most famous types of baked goods in Saudi cuisine.
Ingredients
- For the Filling:
- 4 eggs
- 1 tomato finely chopped
- 1 cup leek finely chopped
- ½ teaspoon black pepper
- ½ teaspoon cumin
- 1 teaspoon salt
- Red chili pepper to taste
- Other Ingredients:
- 350 g Mutabbaq dough
- Vegetable oil as needed
Instructions
- In a bowl, place the eggs, tomato, leek, black pepper, cumin, salt, and red chili pepper. Mix the ingredients until well combined.
- Lightly oil a work surface and place one portion of the Mutabbaq dough on it.
- Add a portion of the filling to the center of the dough. Fold the edges of the dough inward to enclose the filling. Repeat the process until all the dough and filling are used.
- Lightly grease a pan with oil and place it over medium heat.
- Place the Mutabbaq in the pan and cook for about 4 minutes on each side until golden brown.
- Serve the Mutabbaq hot.
