Try this very simple recipe for gluten-free pizza using rice flour.
Ingredients
- For the Dough - Dry Ingredients:
- 120 grams gluten-free flour
- 30 grams rice flour
- 1 teaspoon yeast
- 1 teaspoon sugar
- A pinch of salt
- For the Dough - Wet Ingredients:
- 1 egg
- 2 tablespoons yogurt
- 1 teaspoon apple cider vinegar
- 1.5 tablespoons vegetable oil
- 120 ml warm water
- For the Pizza:
- 3 tablespoons ready-made pizza sauce
- 1 tomato sliced
- 2 teaspoons thyme Za'atar
- 1.5 cups shredded mozzarella cheese
Instructions
- To make the dough: In a deep bowl, mix the yeast, sugar, and warm water. Set the mixture aside for about 5-10 minutes until it becomes frothy.
- Add the yogurt, egg, and vinegar, and mix well.
- Add the gluten-free flour, rice flour, and salt. Knead well with your hands, adding the oil gradually, until you get a sticky and cohesive dough.
- Place the dough in a bowl greased with oil, cover it, and let it rest for about 15 minutes.
- Spread the dough evenly on a medium-sized baking tray lined with parchment paper, greased with oil, and lightly dusted with flour.
- Spread the pizza sauce evenly over the dough. Then, distribute the tomato slices and thyme, and sprinkle the cheese on top.
- Preheat the oven to 190°C (375°F).
- Place the pizza tray in the oven for about 20 minutes until fully cooked, then serve.
