This tray of mashed potatoes mixed with vegetables is a healthy meal for a diet. You can also serve it as a main dish for parties and special occasions.
Ingredients
- For the Mashed Potatoes:
- 1 kg potatoes
- ¼ cup yogurt
- 2 tablespoons olive oil
- 1 tablespoon garlic minced
- Salt to taste
- Black pepper to taste
- For the Vegetable Layer:
- ½ tablespoon olive oil
- 1 onion cut into small cubes
- 2 cloves garlic minced
- 1 carrot cut into small cubes
- 3 stalks celery
- 1 teaspoon onion powder
- ½ teaspoon honey
- Salt to taste
- Black pepper to taste
- 2 teaspoons tomato sauce
- 1 tablespoon vinegar
- ¼ cup broth
- 2 cups lentils cooked
- ½ onion sliced
- 1 cup corn
Instructions
- In a pan over heat, put 2 tablespoons of olive oil, onion, and garlic. Sauté them, then add the carrot, lentils, tomato sauce, honey, onion powder, salt, pepper, vinegar, and corn. Keep stirring the ingredients.
- In a bowl, mix the mashed potatoes with yogurt, olive oil, garlic, salt, and pepper.
- In an oven-safe dish, spread the vegetable mixture and add a little broth. Then, spread the layer of mashed potatoes on top.
- Place the dish in the oven until fully cooked. Then, serve it.
