Ingredients
  

  • For the Mashed Potatoes:
  • 1 kg potatoes
  • ¼ cup yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon garlic minced
  • Salt to taste
  • Black pepper to taste
  • For the Vegetable Layer:
  • ½ tablespoon olive oil
  • 1 onion cut into small cubes
  • 2 cloves garlic minced
  • 1 carrot cut into small cubes
  • 3 stalks celery
  • 1 teaspoon onion powder
  • ½ teaspoon honey
  • Salt to taste
  • Black pepper to taste
  • 2 teaspoons tomato sauce
  • 1 tablespoon vinegar
  • ¼ cup broth
  • 2 cups lentils cooked
  • ½ onion sliced
  • 1 cup corn

Instructions
 

  • In a pan over heat, put 2 tablespoons of olive oil, onion, and garlic. Sauté them, then add the carrot, lentils, tomato sauce, honey, onion powder, salt, pepper, vinegar, and corn. Keep stirring the ingredients.
  • In a bowl, mix the mashed potatoes with yogurt, olive oil, garlic, salt, and pepper.
  • In an oven-safe dish, spread the vegetable mixture and add a little broth. Then, spread the layer of mashed potatoes on top.
  • Place the dish in the oven until fully cooked. Then, serve it.
