- Salt: a pinch
- Eggs: 4 large, yolks and whites separated
- Heavy whipping cream: ¼ cup full-fat
- Butter: ¼ cup melted and slightly cooled
- Sugar substitute: 3 tablespoons
- Lemon zest: from 1 medium lemon
- Lemon juice: 1 tablespoon fresh
- Vanilla extract: ½ teaspoon
- Coconut oil: as needed for greasing the waffle iron
- For Garnish:
- Whipping cream: as needed unsweetened
- Berries: as desired fresh berries or fresh strawberries
Instructions
- In a large bowl, mix the almond flour, coconut flour, baking powder, and salt.
