Hummus & Fresh Vegetable Salad
This hummus and fresh vegetable salad is a complete and healthy meal.
Ingredients
- 1 cup boiled chickpeas
- ½ cup red bell pepper diced
- ½ cup tomato diced
- ¼ cup olive oil
- 3 tablespoons lemon juice
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- 3 tablespoons tahini
- 2 tablespoons yogurt
Instructions
- In a large bowl, mix the boiled chickpeas, diced red bell pepper, and diced tomato.
- To make the dressing: In a separate medium bowl, mix the tahini, yogurt, olive oil, lemon juice, salt, black pepper, and garlic powder until well combined and smooth.
- Pour the dressing over the chickpeas and vegetables in the large bowl. Gently toss everything together until the ingredients are well coated.
- Place the salad on a serving plate and enjoy it cold.
