This hummus and fresh vegetable salad is a complete and healthy meal.

Ingredients
  

  • 1 cup boiled chickpeas
  • ½ cup red bell pepper diced
  • ½ cup tomato diced
  • ¼ cup olive oil
  • 3 tablespoons lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 3 tablespoons tahini
  • 2 tablespoons yogurt

Instructions
 

  • In a large bowl, mix the boiled chickpeas, diced red bell pepper, and diced tomato.
  • To make the dressing: In a separate medium bowl, mix the tahini, yogurt, olive oil, lemon juice, salt, black pepper, and garlic powder until well combined and smooth.
  • Pour the dressing over the chickpeas and vegetables in the large bowl. Gently toss everything together until the ingredients are well coated.
  • Place the salad on a serving plate and enjoy it cold.
