Ingredients
  

  • 4 potatoes cut into thick wedges
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon rosemary
  • 1/2 teaspoon thyme
  • Salt to taste

Instructions
 

  • Preheat the oven to 220°C (430°F).
  • Bring a large pot of water to a boil over medium heat, then turn off the heat.
  • Add the potato wedges to the hot water, season with salt, and let them soak for 2 minutes.
  • Drain the potatoes and place them in a bowl.
  • In a separate bowl, mix the lemon juice, olive oil, rosemary, thyme, and salt.
  • Pour the seasoning mixture over the potatoes and toss until they are evenly coated.
  • Arrange the seasoned potatoes in a single layer on a baking tray.
  • Place the tray in the oven on the middle rack and bake for 25 minutes, or until the potatoes are cooked through and golden.
  • Remove the tray from the oven and serve the roasted potatoes hot.
