Oven-Roasted Potatoes

Ingredients
- 4 potatoes cut into thick wedges
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 teaspoon rosemary
- 1/2 teaspoon thyme
- Salt to taste
Instructions
- Preheat the oven to 220°C (430°F).
- Bring a large pot of water to a boil over medium heat, then turn off the heat.
- Add the potato wedges to the hot water, season with salt, and let them soak for 2 minutes.
- Drain the potatoes and place them in a bowl.
- In a separate bowl, mix the lemon juice, olive oil, rosemary, thyme, and salt.
- Pour the seasoning mixture over the potatoes and toss until they are evenly coated.
- Arrange the seasoned potatoes in a single layer on a baking tray.
- Place the tray in the oven on the middle rack and bake for 25 minutes, or until the potatoes are cooked through and golden.
- Remove the tray from the oven and serve the roasted potatoes hot.
