Cold Semolina Milk Pudding
Although the traditional recipe for semolina pudding relies on large amounts of sugar, butter, and cream, making it high in calories and fat, you can still enjoy this delicious dessert without affecting your diet
Ingredients
- Fine semolina: 1 cup
- Milk: 3 cups skimmed
- Maple syrup: 3 tablespoons
- Rose water: 1 teaspoon
- Vanilla: 1 teaspoon liquid
- Cinnamon: A pinch
- Pistachios: As desired crushed / for garnish
Instructions
- In a non-stick pan over medium heat, add the semolina and stir it constantly until it turns a light golden color and becomes fragrant.
- In a pot over medium heat, pour the milk and add the toasted semolina and maple syrup. Continue stirring the ingredients with a wooden spoon or a hand whisk to prevent the semolina from clumping and sticking to the bottom of the pot until the mixture begins to boil, thickens, and reaches a consistency similar to thick pudding.
- Remove the pot from the heat, add the rose water and vanilla, and stir well.
- Distribute the semolina pudding into individual serving bowls and let it cool slightly at room temperature.
- Cover the bowls and place them in the refrigerator for at least 2-3 hours, or until completely set and cold.
- Just before serving, garnish the pudding with a sprinkle of ground cinnamon and crushed pistachios.
