Ingredients
  

  • Wheat flour: 600 grams
  • Barley: 150 grams
  • Bran: 30 grams
  • Instant yeast: 3/4 tablespoon
  • Salt: 1/4 teaspoon
  • Warm water: 1 1/4 cups

Instructions
 

  • Put the barley in a bowl, cover it with cold water, and set it aside until the barley absorbs the water.
  • Mix the yeast with the warm water and set the mixture aside until it becomes frothy.
  • Add the barley mixture to the yeast. Then, add the wheat flour, bran, and salt. Mix everything until a dough forms.
  • Cover the dough with plastic wrap and let it rest.
  • Divide the dough into equal-sized rounds. Place them on a baking tray lined with parchment paper, cover with a cloth, and let them rest for one hour.
  • Preheat the oven to a medium temperature.
  • Take one piece of dough, roll it out on a flat surface, and place it on the prepared baking tray. Bake in the oven until cooked through.
  • Remove the bread from the oven and place it on a plate.
  • Repeat the process with the remaining dough. Serve the bread warm or at room temperature.
